Corn & Tomato Pasta Salad
Ingredients: Salt 1 pound bow-tie pasta 2 tablespoons extra-virgin olive oil 2 garlic cloves, smashed 1 pint cherry tomatoes 3 ears fresh corn, kernels cut off 2 tablespoons unsalted butter 1/4 cup fresh basil leaves, torn into pieces
Directions1. Bring a large pot of salted water to a boil and cook the pasta until al dente; drain.2. Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the garlic and tomatoes and cook, stirring occasionally, until the tomatoes are softened, about 5 minutes. Stir in the corn, raise the heat slightly and cook until the corn is heated through and golden, about 5 minutes. Season to taste with salt.3. Add the vegetables, butter and basil to the pasta and toss.
Strawberry Spinach Salad
Ingredients:2 tablespoons sesame seeds1 tablespoon poppy seeds1/2 cup white sugar1/2 cup olive oil1/4 cup distilled white vinegar1/4 teaspoon paprika 1/4 teaspoon Worcestershire sauce1 tablespoon minced onion10 ounces fresh spinach - rinsed, driedand torn into bite-size pieces1 quart strawberries - cleaned, hulledand sliced1/4 cup almonds, blanched and slivered
Directions:1. In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour. 2. In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.
