Nicoles Home Made Manicotti

Passed down from my wife's grandmother, here is a little italian dish that although has a light and fluffy pasta, can fullfill the biggest appetite.
Combine the following ingredients in a large bowl
Filling:
3 lbs. Riccotta cheese
1/4 cup Locattelli Grated Cheese ( THE BEST GRATED CHEESE)
Fresh or dried parsley (Preferred fresh)
16 oz. Cubed Mozzarella
Salt and Pepper to taste
Whisk the following ingredients together in a large bowl
Shells:
3 cups Flour
3 cups Milk
3 Eggs
Preheat a 10 non stick frying pan. Use a ladle to pour a pancake size amount into pan. Smooth batter out with the ladle to a thin, crepe like disc. Allow the batter to cook from 30-45 secs. until it looks dry.
Take shell out of pan and lay flat on a dish. Spoon in 2-3 tablespoons of filling across entire center of shell. Roll shell and place in baking dish with sauce on bottom. Fill entire pan with manicotti and top with sauce. (Hopefully you have made your OWN homemade sauce for this tasty dish).
Allow to cook for approx. 35 mins at 350 degrees until sauce is bubbling.
Let them stand for approx. 5 mins before serving.

Try different fillings with your shells. Mushrooms, Spinache etc.
