Meatless Monday Shells With Artichokes And Capers

Did you know there are quite a few meatless options on Long Beach Island? Living On The Veg offers a Meatless Monday menu that you can pre-order and have a healthy, delicious dinner waiting for you to pick up. The Arlington in Ship Bottom offers vegan appetizers and will make a vegan dish upon request. Murphys in Beach Haven offers dairy-free substitutes like sour cream and cream cheese! 

However if you're still not sure what to make for Meatless Monday, here is a recipe that the whole family will love!
Shells with Artichoke & Capers
Serves 6
16 oz Pasta Shells
1 tbsp olive oil
1/2 cup diced onion
4 garlic cloves, smashed
2 cans diced tomatoes
1 tsp dried basil
2 tbsp capers
1 cup jarred artichoke hearts, sliced in half
1/4 cup kalamata olives, chopped
salt, to taste
1 package Tofurky Italian Sausage, optional
Make pasta according to package directions. Meanwhile, saute onion in heated olive oil until translucent and add garlic. Saute for one minute than add tomatoes, basil, capers and artichokes. Cook over medium-high heat for 15 minutes, stirring occasionally. If using sausage, slice on a diagonal and brown according to package directions. Drain pasta and add artichoke mixture, olives, salt and sausage, if using. Sprinkle with a little dairy-free parmigiana and...
