Shells with Artichoke & Capers
16 oz Pasta Shells
1 tbsp olive oil
1/2 cup diced onion
4 garlic cloves, smashed
2 cans diced tomatoes
1 tsp dried basil
2 tbsp capers
1 cup jarred artichoke hearts, sliced in half
1/4 cup kalamata olives, chopped
salt, to taste
1 package Tofurky Italian Sausage, optional
Make pasta according to package directions. Meanwhile, saute onion in heated olive oil until translucent and add garlic. Saute for one minute than add tomatoes, basil, capers and artichokes. Cook over medium-high heat for 15 minutes, stirring occasionally. If using sausage, slice on a diagonal and brown according to package directions.
