GREAT SUMMER SALSA RECIPES

MANGO SALSA 

½ red bell pepper

½ green bell pepper

1 small red onion

1 small jalapeno pepper

1 mango

3 tablespoons soy sauce

3 tablespoons white corn syrup

Splash of mango or orange juice.

 

Finely dice first 5 ingredients, and place in large bowl.

Add remaining ingredients, salt & pepper to taste.  Chill for 2 hours.



 

MELON - PINEAPPLE SALSA 

½ cups diced pineapple

¾ cup diced cantaloupe

¾ cup diced honeydew melon

¼ cup chopped red onion

2 tablespoons olive oil

1 teaspoon seeded and minced Serrano chile

½ teaspoon minced garlic

1 tablespoon raspberry vinegar

½ tablespoon lemon juice

½ tablespoon lime juice

½ teaspoon honey

2 tablespoon fresh minced cilantro

salt & pepper to taste

 

In a large bowl, mix melon, pineapple, cantaloupe, chiles, and onion.

In a separate bowl. Whisk together olive oil, garlic, vinegar, lemon juice, lime juice, and honey.

Chill fruit mixture for 2 hours.  Just before serving combine all ingredients and add cilantro.  Mix well and serve.



 

STRAWBERRY SALSA 

1 pint of fresh strawberries, sliced

4 roma plum tomatoes, seeded and chopped

1 jalapeno pepper, seeded and minced

Juice of 1 lime

1 tablespoon olive oil

 

In a large bowl, mix all ingredients and chill for 2 hours.



 

AVACADO SALSA 

16 ounces of canned corn

2 cans (2.25 oz) sliced black olives

1/3 cup olive oil

1 red bell pepper, chopped

1 small red onion, chopped

½ teaspoon of roasted garlic

¼ cup lemon juice

3 tablespoons white vinegar

½ teaspoon oregano

½ teaspoon salt

½ teaspoon black pepper

4 ripe avacados

 

In a large bowl, combine corn, olives, pepper, and onion.

In a small bowl, combine garlic, olive oil, lemon juice, vinegar, oregano, salt, and pepper.  Mix well.  Pour over corn mixture, and combine.  Chill for 2 hours.

Just before serving, chopped avocados and stir into salsa.



 

RASPBERRY SALSA 

½ cup chopped red bell pepper

½ cup fresh raspberries

¼ cup chopped red onion

2 Serrano pepper

½ cup chopped, seeded tomato

2 teaspoons fresh cilantro

Pinch of salt

 

Combine all ingredients in large bowl and mix well.  Chill for 2 hours.
