I have the best cookie for you. With only 3 to 5 ingredients, anyone can make these. This recipe comes from King Arthur Flour and can be found on their website.
You start with the filling which is done the day before. Put parchment paper on a cookie sheet. Put 12 teaspoon size balls of Nutella (I haven’t tried any of the other brand chocolate-hazelnut spread, but you can) on the parchment paper. I use a teaspoon cookie scoop for this. Put the cookie sheet in the freezer overnight.
Preheat oven to 350 F. Mix together all the other ingredients;
1 cup Chocolate-hazelnut spread (I use ½ cup spread and ½ cup peanut butter)
1 cup AP flour
1 large egg
½ teaspoon espresso powder (optional)
The mixture should be soft, not sticky, think of play dough. If it is too dry I add a few drops of vegetable oil.
Using a tablespoon cookie scoop, make 12 balls of dough. Flatten each ball in the palm of your hand. Now get the frozen spread. Place 1 frozen ball in the center and wrap the dough around making sure it is enclosed and sealed. Roll the dough in your hand to make round.
Put them on the parchment cookie sheet and put a small amount sea salt on top of each ball.
Bake for 8-10 minutes
Serve warm or room temp. reheat very briefly in microwave to liquefy the centers.
