Chicken Bacon Broccoli Pasta

- 8 slices of thick bacon chopped into small pieces 

- 1 1/2  cups chopped yellow onion

- 3 cloves a garlic minced

- 4  cups of broccoli chopped 

- 2 cups of chicken broth 

- 1 10 oz can Ro-tel tomatoes and green chillies 

- 1 cup heavy cream

- 3 cups penne pasta

- 1 tsp salt

- 1 tsp pepper 

-1 cup sharp cheddar cheese shredded 


- in large pot with high sides cook bacon stirring occasionally until crispy ( set aside on plate leaving the grease in the pan)

- season chicken with salt and pepper to taste 

- add chicken to bacon grease and cook until golden brown

- when chicken is cooked set aside with bacon leaving the grease still in the pan

- increase heat and add in broccoli  and onions and cook until golden brown 

- lower heat and add garlic

-remove all veggies and place with the chicken and bacon

-add  the remaining ingredients besides cheddar cheese into the pan bring to boil ,cover , simmer for 15 minutes

- add the chicken,veggies, and bacon back into the pan and stir until heated through 

- top with cheddar cheese

- Enjoy :)
